Ssamjang aubergine great dish to make, super easy and quick. I’ve kept it vegetarian but often throw in some pork mince at the start (just a little) to make it a little heartier. I love a decent peppercorn sauce! This easy version deviates from tradition using Amaretto which gives it a little more sweetness against the heat of the black pepper and that slight nutty flavour of almonds - a favourite of mine! Theo is doing a good job of establishing his brand
I lived in Cyprus for a few years, back in the early 1980s' and gained a real love of Greek Cypriot foods (I disliked liver until I had it as part of a kebab, now it's a favourite). It used to be a bit difficult getting the inside knowledge on recipes, but since the advent of You Tube and the guidance of experts such as Theo, making authentic Cypriot dishes has become much easier. These days, my family's celebratory dish is Kleftiko, which I've made numerous times now and although there are a number of variations, I favour this one. I think I make quite a passable sheftalias too.

When did you add the butter in? Did I miss it? Also when you put the chocolate sauce into the rest of the cream do you do so while it's hot?
Once the cream is boiled remove from the heat and add the butter and then stir in the chocolate while It’s still hot!

Nice video, your time for boiling the octopus was nice! 1 you must prepare the octapus before you go to cook it 2 don't use water 3 don't use salt..... the 90% of the octapus is sea water 4 don't use garlic Use only olive oil , vinegar and some oregano when you finish the boiling, nothing else. If it was frozen maby it will need just a few of salt, taste it before you finish the boiling From a Greek fisherman Thanks alot

Thank you for sharing this recipe! I went to a Greek restaurant recently and their octopus was the best I’ve ever tasted. Sooo tender 🤤 Now I followed your recipe and got exactly the same tender texture 😋 It’s not only better than all my previous attempts to cook octopus at home, it’s way more delicious than most restaurant dishes!
